Savor the Season!
Fall is just around the corner, and that means it’s time to bring out your favorite stews and crockpot recipes! This hearty classic comes from the wife of the OPSU football coach “back in the day” and can be made on the stovetop or in a crockpot—whichever suits your style.
Green Chili Stew
Ingredients:
- 3 lbs ground beef
- 1 large yellow onion
- 1 (26 oz) can Ranch Style beans
- 2 (28 oz) cans diced tomatoes
- 6 (4 oz) cans chopped green chiles
Instructions:
- Brown the ground beef with the chopped onion in a large pot; drain any excess grease.
- Add all canned ingredients to the beef/onion mixture.
- Bring to a boil, stirring occasionally.
- Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
- Serve hot, topped with grated cheese and Saltine crackers.
Want to kick up the heat? Opt for spicy Ranch Style beans and medium or hot green chiles. Despite the generous helping of green chiles, the stew is surprisingly mild—but full of flavor!
This recipe makes a generous batch, perfect for freezing and reheating later on the stove or in the microwave. It’s incredibly easy to prepare—and for a fun, crowd-friendly twist, serve it in coffee mugs so guests can mingle while they munch!
